Recipe: Red Curry Tacos with Blueberry Sauce

If you follow me on Instagram, you would’ve probably noticed that I’m obsessed with Thai flavors. I love curries and stir-fries; coconut milk excites me; lime, fresh herbs, and fish sauce enliven every dish for me. I got so obsessed that I found myself cooking Thai food almost every day, and this even reached a point where in I began to sell my homemade food during weekends—to keep me sane during this pandemic. I find joy in sharing things I enjoy—especially if they are new to others’ palates—and this is probably the same inspiration behind this recipe.

When a huge crate of blueberries found itself on my doorstep one day, I couldn’t even begin to think what sorts of dishes I could make with them! I love fruits, and I love berries! And not just because they are very healthy and packed with nutrients and antioxidants—I simply love them for their taste. And I love the fact that I can enjoy them in so many ways: in a cheesecake (my favorite, everyone knows this, LOL); on top of pancakes; as a smoothie; on a salad; in breads and pastries; or simply, eaten on their own.

Of course, while thinking of what to cook, desserts come to top of mind. However, if you’re like me—a person who’s very impatient with measuring things—you wouldn’t want to even attempt baking and end up wasting precious blueberries, and so I went for something savory!

Blueberry sauces are commonly paired with pork (this combo is yummy, I’ve tried it somewhere), but as you can probably guess, the Thai-obsessed side of me took over and thought, “what if I pair this with Thai flavors?” And so that’s how I came up with these Red Curry Tacos with Blueberry Sauce!

I figured that since Thai cuisine is a balance between sweet, salty, spicy, and sour flavors, then this dish could actually taste good (and it does, surprisingly). There’s heat and saltiness from the curried meats (in this case, I used shrimps and chicken) and then some sweetness and tartness from the blueberry sauce, which also has coconut milk. As for why I chose tacos instead of maybe a sandwich or a wrap, I just thought that tacos are way simpler and you get to assemble your own.

If you’re wondering where to buy blueberries, I actually see them in Robinson’s and SM supermarkets, but they are available in S&R and Farmer’s Market as well. There are some fruit sellers which can deliver blueberries to your home too—I have included a list at the bottom of this post.

Red Curry Tacos with Blueberry Sauce
makes 4


Ingredients:

Curried Shrimps and Chicken:

6-8 pieces of shrimp
1 chicken breast (about 125g)
2 tbsp coconut milk, divided
2 tbsp red curry paste, divided
1 tsp ginger, grated, divided
1 tbsp garlic, minced, divided
Salt
Dash of cayenne pepper (optional)

Blueberry Sauce:

1 pack US blueberries
3-4 cloves of garlic, finely minced
1 tsp ginger, grated
2 tbsp onion, minced
¼ tsp cinnamon
100 ml coconut milk

Others:

4 tortillas
cilantro
red radish, thinly sliced


Procedure:

1. In a small saucepan on medium heat, sauté the onions and garlic. Once fragrant (about 2 minutes), add the ginger. Sauté for another minute.
2. Add the blueberries, cinnamon, and coconut milk, and lightly stir. Mash the berries gently and bring to a boil. Bring down to a simmer and leave until sauce is thick and berries are all crushed and incorporated into the sauce.
3. While waiting for the sauce to finish, peel and devein the shrimps. Slice the chicken breast into long strips.
4. In two separate bowls, toss the shrimp and chicken along with the rest of the ingredients. Mix well.
5. On a pan or grill, cook the shrimp (1-2 minutes per side) and chicken.
6. Assemble on 4 tortillas, top with cilantro and radish, and serve.
