Guest chef Billy Cheong has returned to Manila to give fans of Cantonese cuisine a taste of his special Golden Goose once again! This November, award-winning restaurant Lung Hin at Marco Polo Ortigas Manila is serving the prized dish from Hong Kong—and diners can enjoy this a la carte or as part of a special set menu.
We were able to try the Golden Goose Set Menu, perfect for families or a group of friends eager to sample a fine Cantonese feast. With the premium bird as the star, the set includes a variety of Lung Hin specialties, such as the delicious (and beautiful) Vegetarian Pink Dumplings and my eternal favorite, the meaty and exquisite Pork Siu Mai with Truffle Sauce, for starters. Rouse your appetites even further with the Braised Seafood with Peach Gel Soup—before moving on to the luscious mains.
The Hong Kong Roast Goose is truly a culinary work of art, with its flavorful and tender meat and wonderfully crispy skin! Chef Cheong’s recipe is centuries-old and has earned him numerous awards. We were told that the tastiest parts are the ones near the tail, because the goose is hanged for 10 hours before drying and roasting—therefore all marinade, oils, spices, and seasonings will have been accumulated there. Indeed the sauces have seeped through every fiber of the goose! And every bite is further heightened with a bit of plum sauce.
Other dishes to enjoy include the fresh and delicate Steamed Garoupa in a light black bean sauce, topped with shredded pork and dried mandarin peel (I loved how this was cooked, perfectly letting the fish shine); Pan-fried Crab with Pork Belly in Supreme Soy Sauce; and the Wok-Fried Diced Chicken with Mixed Vegetables, so tasty I want to replicate it at home. Pair everything with tasty fried rice made of diced shrimp, sweet corn, and mushrooms. Finish off with the delicious Chilled Mango and Coconut Jelly—I can eat 5 of these!
