Authentic Golden Goose Comes to Lung Hin, Marco Polo Ortigas

Award-winning guest chef Billy Cheong is coming to Manila to give us a taste of Hong Kong with his Golden Goose recipe—straight from the Guangdong Province.

The classic Golden Goose shall be the featured item this November at Lung Hin, Marco Polo Ortigas' award-winning Chinese restaurant. We were able to try it before it officially becomes available to the public on November 6, and one thing's for sure: diners would be transported to Hong Kong with every bite of the delicious roast goose. The premium goose is prepared and marinated frozen overnight, before being thawed the next day and blanketed with the special sauce made of oils, spices, and seasoningsIt is then hanged for ten (10) hours for drying, before getting roasted to perfection. The result? Meat so flavorful and tender, and skin that's delightfully crispy! I loved how the sauce seeped through each fiber of the goose. You may request for some plum sauce to dip each forkful with—it becomes even more tasty!

Diners can enjoy this roast goose for a la carte orders (half or whole), or with a set menu. We were able to try the set menu which is good for 5 persons—a delicious line up of Lung Hin's exquisite dishes along with the Golden Goose, of course. To start, guests can enjoy the restaurant's famous Steamed Pork Siomai with Truffle Sauce, followed by the Boiled Shrimp Rolls and Pearl Mushroom Soup. Both dishes were so good (the former my favorite) and they further excite you for the feast ahead. Aside from the goose, guests can share a whole Steamed Garoupa with Shredded Pork and Mushroom (Ancient Style), which was just so light, tasty, and perfectly cooked.

The Fried Shrimp and Vermicelli in XO Sauce is another winning dish, with a mildly spicy sauce holding all the ingredients together. One serving of this has generous servings of delicious shrimp and addicting noodles. Vegetarian? The Stir-fried Seasonal Hong Kong Vegetables with Garlic is for you. Pair everything with the Fookian Fried Rice with Diced Shrimp and Dried ScallopsDon't skip dessert, as the Chilled Mango Pudding is one of the best mango desserts I've had yet.
