Addicted to Truffle: Bellini's Risotto and Spaghetti

Today in Addicted to Truffle, let’s celebrate Bellini’s Italian Restaurant's 15th anniversary -- 15 years of remarkable Italian cooking (read my full review here). For the second installment in this new series, I will be featuring two awesome truffle dishes from Bellini’s that are worthy of special mention. Here they are! 

1. Truffle Risotto

My addiction to truffle is such that I can eat rice with truffle oil (if you want to call it that, go ahead) on its own! While my sister calls it “lugaw”, I just ignore her and dig away. Truffle oil or shaved truffle—for me, it doesn’t matter. The scent intoxicates, the taste gratifies; call me uncultured, get your plain rice and get out of my way.


2. Spaghetti al Tartufo Funghi con Prosciutto

In this dish, porcini mushrooms, prosciutto and truffle oil combine together in a well-balanced fusion of saltiness, creaminess, and earthiness. More and more restaurants are incorporating truffle into their pasta creations, but it’s this one from Bellini’s that serves as my benchmark—the one I go back for again and again.
